For dinner last night, I made my famous spinach and feta lasagna. When I pulled out the cook book to get started (from The Grit – love it love it love it), I realized that there were several others things I had the ingredients to make. I made a pan and a half of lasagna and froze most of it (new catchphrase in our house: “Lasagna is the new soup”). I also fired up the crock-pot (or to be fancy, the “slow cooker“), and made split pea dal. The dal finished right before bedtime and I froze most of it as well. These evening activities combined with husband’s trip to the grocery store means that we have no more room in our freezer. This isn’t good because I have vegetables to make veggie stock (and they won’t last forever) and also the ingredients to make carrot-ginger soup (which I’ll be recreating from memory based on eating at the Last Resort Grill over 4 years ago). I also just realized that most of what I’ve made lately is vegetarian. It hasn’t been intentional, but is pretty cool nonetheless.
Does anyone want to come over to my house for dinner? I’ll make a plate of cornbread and we’ll sup to our hearts content.
