Meaty. Rich. Oily. Savory.
These are terms I used in trying to describe my steak with beef bone marrow to husband.
My parents came to town on Friday for my birthday. I wanted to go to Ray’s the Steaks for dinner and was determined to try the hanger steak (aka onglet). Dad, hubs, and I started with the crab bisque – rich and savory. My entree was wonderful. The hangar steak was cooked perfectly – medium rare. The marrow added an oilyness that hubs turned his nose up at, but it suited me just fine. I had the key lime pie for dessert and didn’t sleep well Friday night because my body was still digesting the deliciousness.
Now that I’ve had it, I don’t think I’ll be ordering the marrow for a while. Absolutely wonderful, but not necessary for every Ray’s visit.
