Holiday Wrap-Up

I’ll be spending the evening getting ready for our vacation to Jamaica, but wanted to post before I left. I may have a friend or two post in my absence, but am not sure it will all work out. I’ve had a good couple of days off of work. On Friday, I roasted a chicken and we went out to dinner with a friend. The chicken was probably the best one I’ve roasted yet. The dis-assembly for storage was easy (pull the legs off and the thighs come with…etc) and I was able to get most of the meat off the carcass. Yesterday, we helped a friend move and I spent last night laughing with some of the best women in the world. We watched some awesomely bad movies and I got to use a friend’s spinning wheel. Today I’ve done some holiday shopping, we took Lucky to be boarded, had lunch, went book shopping, and here we are. Husband and I are thrilled to be going somewhere warm for a few days. Misfit Thanksgiving

My lovely friend KH planned and arranged a Misfit Thanksgiving for a group of us that weren’t going to our respective homes/families. We had a grand time. I took collards braised in red wine (subbed mushroom stock for the chicken stock though) as my contribution and we also took a few bottles of red wine and an apple pie from Whole Paycheck. Here are some pics I took as I was prepping the collards after I got home from the gym yesterday.

A couple of my knitting girls went too. CorporateMonkey took some fantastic pictures. Old friends and new friends are excellent. KH and I both had our reservations as to whether or not the groups would mix well. No worries. Everyone got along famously.

Life is good. Mom was in town visiting this weekend while husband was in Georgia playing rugby. We weren’t tourists as planned. Instead we went shopping on Saturday and yesterday hung around the house since Mom was hit by a cold.

In all, a quiet, relaxing weekend. I’m thankful for my wonderful family and fantastic life.
