In a departure from our usual weekend breakfast of biscuits, scrambled eggs, and a meat (sausage or bacon), I made a frittata this morning. I sweated a medium onion (sliced into thin rounds) while I cooked three small potatoes in the microwave. I crushed five cloves of fresh garlic and added those to the onions. When cooked, I roughly cubed the potatoes and added them to the pan and drizzled in some extra-virgin olive oil (no Rachel Ray abbreviations for me). Heavily salted and peppered the mix and mixed in the small amount of steamed zucchini I had from earlier this week. When the zucchini was heated through, I removed the vegetables to another bowl while I beat 6 eggs and let one tablespoon of butter melt in the pan. I stirred two tablespoons of leftover marinara sauce into the veg and then back into the big pan the mess went. Poured the eggs in and mixed it thoroughly. Let it sit on the stove until the eggs started to bubble and then moved the pan to the 475 degree oven for 10 to 15 minutes. Take out, let sit briefly and then enjoy.
It was yummy and I regret not taking a pic of the full pan. We were hungry and ready to eat. Oh well.
